Ep 13 - Goodfellas Prison Sauce Pasta Recipe!


In the thirteenth episode of the Film and Food Podcast Chris launched a new format of the show: Triple Threat! This recipe is inspired by the prison sauce from Goodfellas, adding some delicious asparagus and zucchini, serving on fresh pasta with ricotta and parmesan! This is a game-changing way to add some Italian richness to your easy weeknight pasta!



Goodfellas Prison Sauce on Pasta with Asparagus and Zucchini Recipe:

If you have a few hours up your sleeve the night before you want to eat this, you can prepare the sauce and the next night all you need to do is cook the pasta, grate some cheese, heat the sauce and put it all together for an easy weeknight dinner!







Ingredients:

makes sauce for four serves

10 truss tomatoes

6 fat cloves of garlic

2 onions

3 asparagus spears

1 zucchini

1 tablespoon tomato paste

3 asparagus

A few leaves of fresh basil

fresh ricotta

parmesan

pasta of your choice





Method:



1 Thinly slice the garlic cloves with a very sharp knife. Be careful! Thinly dice the two onions and set both aside


2 Puree 5 tomatoes in a blender and roughly chop the other 5 tomatoes.















3 Now to put the sauce together. First cook the onions in a large saucepan with a few glugs of olive oil until starting to brown a little. Add the tomato paste and garlic and stir through whilst cooking for 1 minute.

4 Add your chopped tomatoes and pureed tomatoes, then finally add a few basil leaves into the sauce. Bring to a boil, then bring back down to medium heat

to have the sauce simmer gently. Add the lid and let simmer for 1 hour.











5 Meanwhile, wash and roughly chop your zucchini and asparagus. After 1 hour use a wooden spoon to mush the soft tomatoes until blended in with the sauce, add the asparagus and zucchini. Put the lid back on and simmer for another hour.


6 Take the sauce of the heat and set aside. Cook your pasta. While your pasta is cooking grate some parmesan cheese and crumble some ricotta.


7 To serve, first add pasta to the bottom of the bowl, then your sauce, cheeses and basil leaves for presentation. Season with salt and olive oil if you desire. Enjoy!
