Ep 6 - F&F Review: Berries and Cream Recipe!

Berries and Cream

This is a delicious simple dessert with a caramel crunch twist that is to die for!
Ingredients (makes 2-4 dessert dishes):
250gm each of raspberries, blueberries and blackberries
1/2 cup finely sliced mint leaves
2 cups of white sugar
1/2 cup of water
250gm heavy cream
1/2 cup of caster sugar
1. In advance, make the caramel. Line a baking tray (make sure it has a lip) with baking paper. Bring sugar and water to boil in a medium pot. Shake occasionally until all sugar is dissolved. Then leave pot without touching to cook for 10 minutes or until it starts to brown and caramelise. When sugar is brown but not burned take the pot of the heat. Pour the caramel onto the tray and spread evenly. Leave to cool inside.
2. When the caramel is cool, use a wooden spoon or mallet to crack the caramel into pieces. Remove all the pieces from the tray and wrap in a tea towel. Keep smashing the caramel until it reaches a dust like consistency. You can make it as fine or as crunchy as your prefer.
3. In a large bowl, combine the cream and sugar and beat until you have stiff peaks.
4. Wash berries, add the mint and distribute evenly among your dessert bowl. Add a scoop of whipped cream and then a good portion of caramel dust to each bowl. If you prefer, give each bowl a powdering of icing sugar.
Serve and enjoy!
